Ingredients:

  • 1 (10-12 pound) Whole Wagyu Brisket from KC Cattle Company
  • 1/4 cup coarse kosher salt
  • 1/4 cup black pepper
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 tablespoon paprika
  • 1 tablespoon smoked paprika
  • 1 teaspoon cayenne pepper (optional)
  • Wood chips for smoking (such as hickory, mesquite, or oak)

Instructions:

  1. Prepare the brisket: Trim any excess fat from the brisket, leaving about 1/4 inch of fat cap. Rinse the brisket and pat it dry with paper towels.
  2. Season the brisket: In a small bowl, combine the salt, pepper, garlic powder, onion powder, paprika, smoked paprika, and cayenne pepper (if using). Rub the seasoning mixture all over the brisket, ensuring it's evenly coated.
