Loaded with juicy Wagyu ground beef, sugar-cured bacon, sharp cheddar, and a splash of your favorite beer—this hearty soup is comfort food at its finest. It’s got all the savory depth of a bacon cheeseburger, with the creamy indulgence of a pub-style beer cheese dip. Perfect for chilly nights, game days, or whenever you're craving something cozy and bold.
Ingredients
- ½ lb Wagyu Ground Beef
- ¼ lb Sugar-Cured Bacon
- 1 Red Bell Pepper, chopped
- 1 Medium Yellow Onion, chopped
- 1 Jalapeño Pepper, chopped
- 3 Cloves Garlic, minced
- 1 Large Carrot, finely chopped
- 4 oz Shredded Cheddar Cheese
- 3 oz Shredded Sharp White Cheddar Cheese
- 2–3 oz Blue Cheese Crumbles
- 3–4 Sprigs Green Onion (reserve some for garnish)
- 8 oz Chicken Stock
- 12 oz Heavy Whipping Cream
- 12 oz Beer of Choice
- 1 Bay Leaf
- 1 tsp Worcestershire Sauce
- ¼ cup Flour (adjust for thickness)
- ½ tbsp Salt
- ½ tsp Ground Mustard
- ½ tsp Paprika
Directions

Prep your veggies:
Chop the red bell pepper, yellow onion, carrot, jalapeño, garlic, and 1–2 sprigs of green onion. Set aside. -
Cook the meat:
In a skillet or pot, cook the Wagyu ground beef and bacon. Set aside a few bacon strips for garnish. -
Sauté the veggies:
In the leftover beef and bacon grease, sauté the chopped veggies (excluding garlic) until softened—about 5–7 minutes. Add garlic and cook 1–2 more minutes. Sprinkle in half the flour and stir to coat. -
Build the base:
In a large pot over low-medium heat, combine the cooked meat and sautéed veggies. Stir in the remaining flour. -
Add liquids & seasonings (gradually):
Stir in, one at a time with brief pauses between:
- Beer
- Heavy cream
- Chicken stock
- Worcestershire sauce
- Salt, mustard, paprika
- Bay leaf
Stir constantly over ~15 minutes.

Melt in the cheese:
Add the shredded cheeses and blue cheese crumbles. Stir gently until melted and well combined. -
Simmer & serve:
Cover and simmer for 30–45 minutes, stirring occasionally. Once it reaches your desired thickness, it’s ready!
Tip: Add more flour for a thicker soup or more chicken stock for a thinner consistency.
Top with chopped green onions and reserved bacon before serving.
