Ingredients:
- 1 lb Wagyu Ground Beef
- 1 medium sweet potato, roasted and mashed
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp smoked paprika
- Salt and pepper to taste
- 1/2 cup of shredded cheddar cheese
- Fresh cilantro & jalapeño slices for garnish
- Tortilla chips or corn chips for dipping
Instructions:
- Roast the sweet potato by poking holes in it and baking at 400°F for 40 minutes, then mash.
- Cook ground beef in a skillet with diced onion and bell pepper until browned.
- Add chili powder, cumin, smoked paprika, salt, and pepper, and mix in the mashed sweet potato.
- Stir until combined and creamy.
- Put the mixture into a cast iron pan.
- Top with cheddar cheese and place in oven for 10 minutes.
- Garnish with cilantro and jalapeños slices. Serve with chips for dipping.
