Wagyu and Wild Mushroom Stuffing

Move over, breadcrumb stuffing! This Thanksgiving, indulge in a stuffing that's truly decadent. Imagine a medley of earthy wild mushrooms, fragrant herbs, and savory Wagyu beef, all coming together to create a symphony of flavors. This stuffing is so rich and flavorful that it can stand alone as a side dish, or it can be used to stuff your Thanksgiving turkey for an extra layer of indulgence.

Ingredients:

  • 1 pound crusty bread, cut into 1-inch cubes (about 8 cups)
  • 1 pound KC Cattle Company ground Wagyu beef
  • 1 pound mixed wild mushrooms, such as chanterelle, shiitake, and oyster, sliced
  • 1/2 cup butter
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1/2 cup dry sherry or white wine
  • 1 cup chicken broth
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh sage
  • 1/4 cup chopped fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Cooking Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Spread the bread cubes on a baking sheet and bake for 10-15 minutes, or until lightly toasted.
  3. While the bread is toasting, heat the butter in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  4. Add the ground Wagyu beef and cook until browned, breaking it up with a spoon. Drain off any excess fat.
  5. Add the mushrooms and cook until softened, about 5 minutes more.
  6. Stir in the sherry or white wine and cook for 1 minute, scraping up any browned bits from the bottom of the pan.
  7. Add the chicken broth, parsley, sage, thyme, salt, and pepper. Bring to a simmer and cook for 5 minutes, or until the liquid has reduced slightly.
  8. Combine the toasted bread cubes and the mushroom mixture in a large bowl. Toss to combine.
  9. Transfer the stuffing to a greased 9x13 inch baking dish.
  10. Bake for 30-40 minutes, or until golden brown and heated through.
