Blend chimichurri ingredients until well incorporated. Taste chimichurri and make adjustments depending on your liking. If you’d like it more tart, add more lime juice or rice wine vinegar. If too tart add more honey. Take half the chimichurri and marinate the steak 2-6 hours. Season steak with preferred seasonings and grill to desired internal temp. Slice thin and place 1/2 slices steak in each bun. Top with additional chimichurri sauce and lettuce.
