Mix meat with ketchup, garlic, ginger, salt, pepper and 1 tbsp beef rub. Dust meatloaf with additional rub and then smoke at 225 for 2 hours or until 135-140 internal.
Let meatloaf cool and slice around an inch thick. Top pretzel bun with smoked meatloaf, mashed potatoes, crispy onions and bbq sauce.
